It’s actually better to move around his shield, as his jab attack will likely not hit you, and you can smack him from behind. That goes for most enemies in general, as I have found, moving towards their offhand instead of their swordhand.

“Fight lame and shitty”
I was thinking about that while watching you fight, and come to the conclusion that I disagree with that advice for three reasons. These hold mainly for melee characters; they are the type that I prefer and have been using since Demon’s Souls (halberd 5 lyfe! Also, starting as a faith character with a halberd was ludicrous)
The first and simplest is that it’s boring to watch and play. Fighting “lame and shitty” takes so long and is so repetitive that you might as well play a ranged character. You are more lethal, and fights are more lethal to you. That can be scary, but if you let that get to you, of course you’re going to psyche yourself out and lose.
That leads into the second reason; the way you’re playing isn’t really the most efficient way to learn how to play a melee character (at least, as far as I’ve seen). You need to know your ranges, your attack patterns and potential damage, where your invincibility frames are. Slow and shitty doesn’t teach you that. Engaging only when you think you’re completely safe doesn’t teach you that. By knowing that your enemy swings in THIS pattern at THAT speed, you learn when to roll and how. By knowing your weapon, you learn the range you need to engage at both to maximize the damage you do and minimize the (durability) damage it takes (seriously, halberds are awesome. Hit with the blade, do stupid damage. Strike with the haft, your weapon breaks). It’s not ballsy to roll into the Dragonrider on that second swing; it’s perfectly safe as long as you know what you’re doing.
And there’s the third reason; playing safe and shitty is going to get you killed. You get antsy waiting for the “perfect moment,” giving the boss more opportunities to land the really deadly attacks. You get impatient. You don’t know the real moments that you want to attack in. End result? You go in when you shouldn’t, you don’t know how to get yourself out of the danger zone, or if you can stagger your enemy, and you die.
In contrast to your battle with the Dragonrider, watch EpicNameBro do the same fight. His advice was simply, “walk forward.” That allowed him to outmanoeuver the boss easily, because it can’t hit anything behind it. If you don’t fear the enemies, you can much more easily expose their weak points and exploit them.
If you’re going to cut content, what I would suggest is practice beating on enemies for a couple hours. Learn your swings and rolls. Learn when you’re invincible and use that in the boss fights. Practice the bosses a couple times as a phantom before the real deal (yeah, that’s boring. But there’s no better way to learn what you can do during a pattern than trying it out) and attenuate yourself to the tension and rhythm of melee play. And learn the sweet spot for your weapon.

To be fair, Woolie would be completely paralyzed if Pat wasn’t there to peptalk him and hold his hand. It’s a necessary evil as long as we’re still in the growing pains of this playthrough. Once Woolie gets a bit more practice and becomes comfortable with the melee combat, he might get a bit more confidence and Pat can back off a bit.

I know I’m opening a can of worms by saying this, and it isn’t my intention to just stir up the pot, but I need to say this:
There’s a reason why God doesn’t just sit in church visibly and do miracles when people ask for proof. According to Hebrews 11:6:
“But without faith it is impossible to please Him, for he who comes to God must believe that He is, and that He is a rewarder of those who diligently seek Him.”
And in John 4:23-24:
“But the hour is coming, and now is, when the true worshipers will worship the Father in spirit and truth; for the Father is seeking such to worship Him. God is Spirit, and those who worship Him must worship in spirit and truth.”
Jesus also said the only sign He was going to give us was His resurrection from the dead in Matthew 12:39-40.
God wants people who want Him. Period. That’s the secret. If you don’t want Him, fine. But if you do want Him, He expects you to have faith in Him. Not having faith is tantamount to calling God a liar.
This is why the antichrist is going to be so successful in getting followers, because he’s going to cast the lightning when people ask, and people are going to be quick to put their faith in that, but they’re going to forget what Jesus said and did, and the antichrist is not going to die for their sins like Jesus did. People are going to go to hell because they chose the lightshow they could see, and because they did not believe the words of Jesus.
I know, I’m the Bible thumper. I’m the guy that had to go there. I just wanted to show that there was a reason in the Bible regarding why you don’t walk into church and get a visual display, like the guys were saying.
Real quick, Woolie, thank you for putting yourself on display on this playthrough. Playing the game when you still aren’t confident in yourself while getting constant tips/criticism, for the sake of our entertainment, is really cool of you. I hope this experience is fun for you, and doesn’t turn you off of Dark Souls.

Constructive criticism guys. For the bosses you fought so far. You can simply, side strafe at close range on their shield side to gain the advantage. Rather then moving back and forth, leaving yourself vulnerable. I’m not a pro at all. I’m shit at the game. Pat, you seriously have to stop discouraging aggression, in souls half of the time you die to bosses it’s because you’re too aggressive, the other half it’s because you’re not aggressive enough. The reason Woolie couldn’t beat the Pursuer was because you told him to pussyfoot around a boss for ages that can kill him in two hits, I know he’s a beginner but if he plays like a tank on a that build he’s never gonna “git gud”, a strength build with a greatshield is far better suited to how you’re telling him to play, IMO.

I think you guys should know, the reason your weapons break so quickly is because you swing at corpses. I think it has something to do with the attack frames, and how the longer it’s attacking an enemy’s body that won’t take damage, the more fucked your weapon gets. That drains durability fast, especially on PC where there’s more frames per second for the game to acknowledge the fact your mace is in contact with a corpse. It’s a bug that they haven’t gotten around to fixing yet.
So really that mace is a lot more durable than you think it is, it’s just that it’s bugged.
