My guess on the Eoten thing is they tried to transliterate Jotun, like the Norse giants. I duno man.

It’s actually the Anglo-Saxon version of the same word. The basic idea is that “Attack on Titan” is objectively incorrect as a translation of “Shingeki no Kyojin” that was probably devised by a publishing intern, so a translator has no obligation to use it. So, they don’t have a very good reason to translate “kyojin” as “titan,” either.
Then they got super indulgent and went for Anglo-Saxon vocabulary (as opposed to words with Romance origins) to represent the brutality of the giants. Hence, “The Eoten Onslaught.” It’s inarguably more accurate, but no one was ever going to use it.
Oh, they also conjugated “eoten” as if they were actually writing in old English in their subs.
